Wine vinegars are an under-used seasoning, and work well in hot dishes, adding an uplifting acidity just as well as they they do at dressing salads. This Sherry Vinegar is an ideal partner to rich meats such as duck or lamb: the manufacturers suggest sautéing calves liver in the vinegar as a base for a delicious gravy.
It also makes the most fantastic fresh salad dressing mixed with walnut oil and seasoning.
